Amazing leftover pancakes!

I love eating leftovers – I think there is a glorious taste to non-wastefulness and I really don’t like throwing food away. Last weekend we had half a tin of pineapple I really wanted to use up in something, ideally a pudding, without spending any money. I found this great recipe for pineapple and banana pancakes. They were thick, american style pancakes which worked really well with the fruit chunks.

They were such a treat and amazingly we had all the other ingredients in the cupboard already including a past-it banana! The picture doesn’t do them justice at all, they were half-eaten by this point…
